Introduction:

Spaghetti alla Carbonara is a classic Italian pasta dish beloved for its simplicity and rich, creamy flavor. Originating from Rome, this dish traditionally consists of spaghetti tossed with crispy pancetta or guanciale (cured pork cheek), eggs, cheese, and black pepper. It’s a comforting and satisfying meal that comes together quickly, making it perfect for both weeknight dinners and special occasions.

Ingredients:

  • 400g (14 oz) spaghetti
  • 150g (5 oz) pancetta or guanciale, diced
  • 3 large eggs
  • 100g (1 cup) grated Pecorino Romano cheese
  • 50g (1/2 cup) grated Parmesan cheese
  • 2 cloves garlic, minced (optional)
  • Freshly ground black pepper
  • Salt to taste
  • Italian flat-leaf parsley, chopped (for garnish)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the spaghetti.
  2. Prepare the Sauce:
    • While the pasta is cooking, heat a large skillet over medium heat. Add the diced pancetta or guanciale and cook until crispy and golden brown, about 5-7 minutes. If using garlic, add it to the skillet during the last minute of cooking.
  3. Make the Carbonara Sauce:
    • In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and grated Parmesan cheese until well combined.
  4. Combine Pasta and Sauce:
    • Once the spaghetti is cooked and drained, immediately transfer it to the skillet with the cooked pancetta or guanciale (and garlic, if using). Toss well to coat the spaghetti with the rendered fat.
  5. Add the Sauce:
    • Remove the skillet from heat. Pour the egg and cheese mixture over the hot pasta, tossing quickly and continuously to coat the spaghetti evenly. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce is too thick, gradually add some of the reserved pasta cooking water until you reach your desired consistency.
  6. Season and Serve:
    • Season the spaghetti alla carbonara with freshly ground black pepper and salt to taste. Garnish with chopped Italian parsley for freshness and color.
  7. Serve Immediately:
    • Divide the spaghetti alla carbonara among serving plates or bowls. Serve immediately while still hot, ensuring the creamy sauce remains silky and luxurious.
