Ingredients:

  • 500g (1 lb) boneless, skinless chicken breasts or pork loin, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes
  • Pita bread, for serving
  • Tzatziki sauce, for serving
  • Sliced tomatoes, onions, and cucumbers, for serving

Instructions:

1. Marinate the Meat:

  • In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper. Mix well to create the marinade.
  • Add the bite-sized pieces of chicken or pork to the marinade, ensuring they are evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or overnight for best results.

2. Prepare the Skewers:

  • Preheat the grill or grill pan to medium-high heat.
  • Thread the marinated meat onto the soaked wooden skewers, leaving a little space between each piece to ensure even cooking.

3. Grill the Souvlaki:

  • Place the skewers on the preheated grill and cook for about 6-8 minutes on each side, or until the meat is cooked through and has grill marks. Brush the skewers with any remaining marinade while grilling for extra flavor.

4. Warm the Pita Bread:

  • While the meat is grilling, lightly warm the pita bread on the grill for a few seconds on each side, or wrap it in foil and warm it in the oven.

5. Serve the Souvlaki:

  • Remove the cooked skewers from the grill and transfer them to a serving platter.
  • Serve the Souvlaki hot with warmed pita bread, tzatziki sauce, and sliced tomatoes, onions, and cucumbers on the side.
