Kung Pao Chicken Recipe

Ingredients:

  • 500g (1 lb) boneless, skinless chicken breast or thigh, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 3-4 dried red chilies, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 bell pepper, diced
  • 1/2 cup roasted peanuts
  • Spring onions, sliced for garnish

Instructions:

1. Marinate the Chicken:

  • In a bowl, mix together soy sauce, rice vinegar, hoisin sauce, and cornstarch to create the marinade.
  • Add the chicken pieces to the marinade, ensuring they are evenly coated. Let it marinate for at least 30 minutes in the refrigerator.

2. Stir-Fry the Chicken:

  • Heat vegetable oil in a wok or large skillet over high heat.
  • Add the marinated chicken pieces and stir-fry for 4-5 minutes, or until they are browned and cooked through. Remove the chicken from the skillet and set aside.

3. Prepare the Sauce:

  • In the same skillet, add a little more oil if needed. Add the chopped dried red chilies, minced garlic, and minced ginger. Stir-fry for about 1 minute until fragrant.
  • Add the diced bell pepper and continue to stir-fry for another 2-3 minutes, or until the peppers are slightly softened.

4. Combine and Cook:

  • Return the cooked chicken to the skillet and mix well with the vegetables.
  • Add the roasted peanuts to the skillet and stir to combine.
  • Pour in the remaining marinade sauce and cook for another 1-2 minutes, stirring constantly, until the sauce has thickened and coats the chicken and vegetables evenly.

5. Serve:

  • Transfer the Kung Pao Chicken to a serving dish and garnish with sliced spring onions.
  • Serve hot with steamed rice or noodles as a main dish for a delicious and satisfying meal.
