Introduction:

Jollof Rice is a vibrant and flavorful dish that originates from West Africa, particularly Nigeria and Ghana, although variations of it are enjoyed across the region. This one-pot rice dish is known for its rich tomato-based sauce infused with aromatic spices, resulting in a delicious and satisfying meal. Jollof Rice is a staple at many West African gatherings and celebrations, cherished for its comforting taste and cultural significance.

Ingredients:

  • 2 cups long-grain parboiled rice
  • 400g (14 oz) canned chopped tomatoes or 4 fresh tomatoes, blended
  • 1 onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1-2 Scotch bonnet peppers or habanero peppers, chopped (adjust to taste)
  • 1 cup tomato paste
  • 2 cups chicken or vegetable broth
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 cup mixed vegetables (such as carrots, peas, and green beans)
  • Cooking oil

Instructions:

  1. Prepare the Sauce Base:
    • Heat some cooking oil in a large pot or Dutch oven over medium heat.
    • Add the chopped onion, garlic, bell pepper, and Scotch bonnet peppers. Sauté until softened and fragrant, about 5-7 minutes.
  2. Add the Tomato Paste and Spices:
    • Stir in the tomato paste and cook for another 2-3 minutes, allowing it to caramelize slightly.
    • Add the curry powder, thyme, paprika, ground ginger, and ground nutmeg. Cook for another minute, stirring constantly to toast the spices.
  3. Incorporate the Tomatoes and Broth:
    • Pour in the canned chopped tomatoes or blended fresh tomatoes into the pot, stirring well to combine.
    • Add the chicken or vegetable broth, stirring to incorporate all the ingredients. Bring the mixture to a gentle simmer.
  4. Cook the Rice:
    • Rinse the parboiled rice under cold water until the water runs clear. Drain well.
    • Add the rinsed rice to the pot, stirring to coat it evenly with the tomato mixture.
    • Cover the pot with a lid and reduce the heat to low. Allow the rice to simmer gently for about 20-25 minutes, or until cooked through and the liquid is absorbed. Stir occasionally to prevent sticking.
  5. Add the Vegetables:
    • Once the rice is almost cooked, add the mixed vegetables to the pot, stirring to distribute them evenly.
    • Continue to cook for another 5-7 minutes, or until the vegetables are tender and the rice is fully cooked.
  6. Serve:
    • Once the Jollof Rice is cooked to perfection, remove the pot from the heat.
    • Fluff the rice with a fork and adjust the seasoning with salt and pepper, if needed.
    • Serve the Jollof Rice hot as a main dish or as a side dish alongside grilled chicken, fish, or beef.
