Introduction:

Biryani is a flavorful and aromatic rice dish that originated in the Indian subcontinent. It is made by layering fragrant rice with tender meat, poultry, or vegetables, and a blend of aromatic spices. Biryani is a beloved dish cherished for its rich flavors and textures, making it a popular choice for special occasions and celebrations across the Indian subcontinent and beyond.

Ingredients:

  • 2 cups basmati rice, washed and soaked for 30 minutes
  • 500g (1 lb) chicken, mutton, or beef, cut into pieces (or vegetables for a vegetarian version)
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 1/4 cup cooking oil or ghee
  • 2 tablespoons biryani masala
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Whole spices (such as cinnamon, cardamom, cloves, bay leaves)
  • Fresh cilantro and mint leaves for garnish
  • Salt to taste

Instructions:

  1. Prepare the Meat or Vegetables:
    • Marinate the meat with yogurt, biryani masala, ginger-garlic paste, chili powder, turmeric powder, ground cumin, ground coriander, and salt. Allow it to marinate for at least 1 hour, preferably overnight for better flavor. If using vegetables, skip this step.
  2. Cook the Rice:
    • In a large pot, bring water to a boil and add salt. Drain the soaked rice and add it to the boiling water. Cook until the rice is 70% done. Drain and set aside.
  3. Sauté Onions and Tomatoes:
    • Heat oil or ghee in a separate large pot or Dutch oven. Add sliced onions and sauté until golden brown. Remove half of the fried onions and set aside for garnish.
    • Add chopped tomatoes to the remaining onions in the pot and cook until they turn mushy.
  4. Layer the Biryani:
    • Arrange the marinated meat or vegetables over the sautéed onions and tomatoes in the pot.
    • Layer the partially cooked rice evenly over the meat or vegetables.
    • Sprinkle the reserved fried onions, fresh cilantro, and mint leaves on top of the rice.
  5. Cook the Biryani:
    • Cover the pot tightly with a lid or aluminum foil to seal in the steam.
    • Cook on low heat for about 20-25 minutes, or until the meat is tender and the rice is fully cooked. Alternatively, you can place the pot over a tawa (griddle) to prevent burning.
    • Once cooked, gently fluff the biryani with a fork to mix the layers.
  6. Serve:
    • Transfer the biryani to a serving platter, ensuring to scoop from the bottom to get all the layers.
    • Garnish with additional fresh cilantro and mint leaves.
    • Serve hot with raita (yogurt sauce), salad, and your favorite pickles.
