Authentic Ugali Recipe – Traditional African Cornmeal Dish

Ugali, also known as Sima, is a cornerstone of many African cuisines, particularly in East Africa. This simple, yet hearty dish made primarily from white cornmeal, water, and salt, offers a unique taste and texture. Ingredients:

  • 2 teaspoons salt (adjust to taste)
  • 2 cups white cornmeal (fine or medium grind)

Instructions:

Preparing the Water:

  1. Boil Water: In a large pot, bring 4 cups of water to a rolling boil. Add the salt.

Mixing the Cornmeal:

  1. Initial Mixing: Gradually whisk in 1 cup of cornmeal, ensuring to stir quickly to avoid lumps.
  2. Cook the Mixture: Reduce the heat to medium-low and continue to stir. The mixture should start to thicken.

The Final Touch:

  1. Adding More Cornmeal: Gradually add the remaining cornmeal, stirring constantly. Use a wooden spoon as the mixture thickens.
  2. Stir to Perfection: Keep stirring until the mixture pulls away from the sides of the pot and has a smooth yet firm consistency.

Serving:

  1. Mold and Serve: Turn off the heat. Wet a bowl with water and spoon the ugali into it. Let it sit for a few minutes, then invert onto a plate. It should come out in a cake-like shape.
